Select potatoes from the Granada plain, grown at the foot of the Sierra Nevada, fried by hand and with fleur de sel from the salt flats of the Cabo de Gata Natural Park . The salt is carefully hand-collected and left to dry in the sun for more than a year so that it remains pure, white and retains all the flavor of the sea.
