After making my mother’s Red Wine vinaigrette for about five years, one day I ran out with no red wine vinegar in the house. But I had Apple Cider vinegar and I used that instead with delicious results. This strong and sassy concoction is vibrant enough to stand up to almost any salad you choose, even a spicy arugula. It is made with a good dose of apple cider vinegar, making it fruity and bold. Throw this on your kale and you may live forever. It is also wonderful on coleslaw or potato salad.
